## Thermador steam and combination oven repair

Most steam oven faults we see begin as deposit in the generator, the fill line or the drain rather than as a failed board, and they announce themselves early.

A steam oven boils tap water for a living, and everything it leaves behind stays in the generator. That single fact explains the great majority of the complaints we are called out to, and it is why the descale routine on this appliance is maintenance rather than a suggestion. JEA publishes tap water hardness by ZIP code, and Mandarin’s 32223 is listed at 254 parts per million, about fifteen grains per gallon — enough that a machine used several times a week will want descaling more often than a manual written for the national average assumes.

None of that is a design flaw and none of it is unusual. It simply means the generator is the first place we look, and that the earliest symptoms are worth acting on while they are still cheap.

### What scale does, in order

First the descale interval shortens. The control counts cycles and water volume to decide when to prompt you, but the deposit is not linear, so a machine that used to ask twice a year starts asking every couple of months. That is the earliest warning, and it is the cheapest point to act.

Next the steam gets late or thin. A scaled element transfers heat more slowly into the water around it, so the generator takes longer to reach a boil and the cavity sees steam well after the cycle has started. Food comes out drier than it used to and people adjust their timings rather than calling anyone.

Then the level sensing goes wrong. Most of these ovens judge water level electrically, and mineral on the probe changes what the control reads. The oven either refuses to fill because it thinks it is already full, or overfills and leaves water standing in the cavity at the end of the cycle.

Finally the drain blocks, usually at the pump or in the short run of hose before it. That is the point at which the oven stops working entirely and the call gets made.

### What a repair visit looks like

We open the machine and look at the generator rather than reading the fault code and stopping there. A fault code on a steam oven describes a consequence, not a cause, and replacing the part the code names will get you a working oven that fails again on the same schedule.

Where the deposit is light we descale properly with the correct solution and enough dwell time, flush the fill and drain paths, and clean the level probe. Where the deposit has hardened onto the element the element is replaced, and we say so in the written estimate with the reasoning attached, because it is a part people are right to question.

Genuine OEM parts are ordered against the model and serial from your data plate. The warranty is ninety days on our labour and three hundred and sixty-five days on the part.

### Plumbed versus reservoir

Some of these ovens draw from a tank you fill by hand and some are plumbed into the house supply. The plumbed installations tend to go longer between descales simply because nobody thinks about them, while a reservoir gets seen every time it is filled.

The two installations also fail differently. A reservoir machine has a pickup, a seal and a tank sensor that a plumbed one does not, and a reservoir that empties while the cavity stays dry is usually one of those three rather than a generator fault. A plumbed machine has an inlet valve, a filter if one was fitted, and a shutoff that may not have been touched since installation day. We ask which one you have when you book, because it decides what we bring.

### Combination ovens

A combination steam oven has a conventional bake and convection system sharing the cavity with the steam circuit, and a fault in one is regularly blamed on the other. An oven that will not brown may have a steam fault holding humidity in the cavity rather than a heating fault. We test both circuits separately before quoting anything.

The diagnostic is a flat $129 and is credited toward the repair when you approve the work.

Symptoms we see on this one

- Descale reminder returns within weeks of a descale
- Little or no steam, or steam that arrives late in the cycle
- Water left standing in the cavity at the end of a cycle
- Reservoir empties but the cavity stays dry
- Error shown on fill or drain, or the cycle stops partway
- White crust on the cavity floor or around the steam outlet

A flat $129 covers the visit and the diagnosis. It is credited toward the repair when you approve the work.

Ninety days on our labour, three hundred and sixty-five days on the parts we install.

### From the almanac

- [Why the data plate decides which part we order](https://duvalthermador.com/almanac/parts-model-and-serial/) A built-in appliance is a series of running changes. The plate inside the door says which version you own, and ordering without it is how the wrong part arrives.

### After a steam-oven visit in Mandarin

Rated 4.8 out of 5 across 43 customer reviews. [Read all 43](https://duvalthermador.com/reviews/).

- ★★★★★ Water sat in the bottom of the cavity at the end of every programme. The drain pump was turning but its outlet had a lime plug most of the way along. He cleared the run and checked that it emptied in the normal time. Emeka N. July 2026
- ★★★★★ The descale reminder came back within a fortnight of descaling. He took the generator apart and there was a hard scale collar around the element that no cycle was ever going to shift. Cleaned by hand, gone since. Thaddeus Y. August 2026
- ★★★★☆ Steam arrived very late in the programme so nothing proofed properly. The generator element was weak rather than dead. He ordered the replacement and it came in slower than either of us hoped, but the fix itself was clean. Barnaby O. May 2026

*Steam work is a water-side and a seal-side job, and both are measured before either is replaced.*
